Basic Marinating Tips
Garlic, onions,
broth, seasonings, and mustards are just a sampling of the
components of marinades that will deliciously seep flavor into
meat, fish, or poultry. The acid-containing ingredients in
marinades such as lemon juice, wine, and vinegar help break down
the tough connective tissues, tenderizing tougher, leaner cuts
of meat.
While poultry
and fish don't need tenderizing, marinades can add indescribable
flavor, especially when
grilling.
Here are some
marinating guidelines:
Beef - Add flavor, marinate up to 2 hours.
- Tenderize lean cuts, at least
6 hours.
Poultry - 30 minutes, up to overnight.
Fish - Marinate 30 minutes up to one hour.
Always marinate your food in the refrigerator. I like to use a
sealed, plastic,
food-safe storage bag so that I can
flip it over a couple of times for a more even marinating, and,
more importantly, for quick toss and easier cleanup when done.

Do not reuse
marinade that has been in contact with raw meat, poultry or
fish, unless you boil it to kill any bacteria contained in it.
